Best Ever French Toast Sticks

These french toast sticks are truly the best I have ever had.  I made them for our Christmas brunch this year and they were a huge hit!  I slightly tweaked and omitted a few steps from the original recipe and quickly added my version to my breakfast menu.  I will make them over and over again.  They are that good!  The baking powder makes these sticks extra fluffy, meaning extra yum!!  Check out the recipe below.

Ingredients

  • vegetable or canola oil (for frying)
  • 2 cups milk
  • 2 large eggs
  • 1 cup all-purpose flour
  • 2 1/2 Tbsp sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla
  • 1 loaf (12 slices) stale white bread - see Notes below regarding instructions for stale bread
  • powdered sugar for dusting
  • syrup for dipping

Instructions

  1. Add about 1/4" oil to the bottom of your electric skillet or frying pan and heat oil to 375°.
  2. While the oil is heating, cut your bread into 3 sticks per slice of bread (I leave the crust on).
  3. In a large bowl or baking dish mix together the flour, sugar, baking powder and salt. Add the milk, eggs and vanilla and mix well with a whisk to dissolve lumps.
  4. When the oil is heated dip 1 stick in the batter and (to avoid soggy french toast), coat both sides quickly.
  5. Let any extra coating drip from the stick and then transfer the coated stick to the heated pan, repeat with the next stick. Don't over-crowd the pan. I fry 8 sticks at a time. If frying all 36 sticks you will have about 4 1/2 batches to fry.
  6. When the sticks become golden brown on one side flip them over and brown the other side.
  7. Transfer cooked strips to a paper towel for draining.
  8. Just before serving, dust the top of the sticks with powdered sugar.
  9. Serve with your favorite syrup. I like to serve the syrup in individual ramekins so each person can dip as little or as much as they like.

To Reheat Leftover French Toast Sticks

  1. Add 1/4" oil to electric skillet or frying pan and heat to 350°
  2. Place 8 previously cooked sticks at a time in the heated oil and then fry them about 1 minute on each side, just enough to heat the sticks through.
  3. Drain sticks on a paper towel.
  4. Dust with powdered sugar just before serving.
  5. Serve with your favorite syrup.

Notes

Bread works best when it is slightly stale. If your bread is fresh you can stiffen it up a bit by keeping it in the refrigerator until ready to use, then 1 to 2 hours before frying, lay each slice separately on the counter. The air will dry them out to the right consistency.
